Broccoli & Parmesan-Stuffed Pasta

I am particularly fond of orecchiotte (large ear-shaped pasta cups), however there is no reason why filling can't be used in conchiglione (large pasta shells) or cannelloni (tubes) or folded into ravioli if you so choose. I found this reipe in Julie Le Clerc's book "simple deli food", it is a fantastic book from a fantastic writer. It should be noted that (as far as I'm awear) this is her recipe.
  • 12 orecchiotte or other large pasta shapes
  • 200g broccoli florets
  • 2 cloves garlic
  • 1 tblsp chopped fresh oregano
  • ½ cup freshly grated parmesan
  • salt & freshly ground black pepper
  • ¼ cup cream
  • 1 tblsp extra virgin olive oil
  • 2 cups quality prepared tomato pasta sauce
  • Parmesan shavings and oregano leaves to garnish
Cook the pasta shapes in plenty of just simmering salted water for 10 minutes or until softened but still holding their shape. Drain and transfer to cold water to cool. Drain well before filling.

To make stuffing, cook broccoli in boiling salted water for 5 minutes until just tender. Drain well and refresh with cold water to preserve green colour. Chop garlic and oregano n the bowl of a food processor. Add broccoli and process to pureé. Add parmesan, salt and pepper to taste and cream to combine.

Lightly oil a large flat ovenproof dish and fill to 1cm with tomato pasta sauce recipe. Cover with foil and bake for 20-25 minutes in an oven preheated to 190°C. Garnish with parmesan shavings and oregano leaves.

Taste for seasoning and serve the pasta immediately, with more ground black pepper and extra grated parmesan handed round separately.

  • 25g/ 1oz/ 2 tsbp butter
  • 150g/ 5oz/ ¾ cup mascarpone cheese
  • 90g/ 3 ½ oz cooked ham, cut into thin strips
  • 30ml/ 2 tsbp milk 45ml/ 3 tbsp freshly greated paremesan cheese, plus extra to serve
  • 500g/ 1 ¼ lb fresh linguine salt and ground black pepper
Melt the butter in a medium saucepan, add the mascarpone, ham and milk and stir well over a low heat until the mascarpone has melted. Add 15ml/ 1 tsp of the greated parmesan and plenty of pepper and stir well.

Cook the pasta in a large saucepan of salted boiling water for 2-3 minutes intil al dente.

Drain the cooked pasta well and tip it into a warmed bowl. Pour the sauce over the pasta, add the remaining parmesan and toss well.

Taste for seasoning and serve the pasta immediately, with more ground black pepper and extra grated parmesan handed round separately.
Add the mushrooms and courgette into the pan with the shallots and fry until the mushrooms have softened. Add the mascarpone and the ham so the mascarpone melts and the ham heats through. Season with black pepper and add the parmesan. Stir well. Toss with the cooked pasta and serve with parmesan.

Carrot Pasta Sauce Recipe

  • 3 carrots, peeled and chopped
  • 2 cloves garlic, peeled
  • ¼ cup orange juice

Method

crockpotI received my slow cooker,( you can call it crock pot, slow cooker, crockpot, they are all different names for the same slow cooker style of pot) from my mom, who got it as a holiday gift from her work place 2 Years ago and asked me if I wanted it. I said no! No slow cooker for me.

It's too big, I have no time,what will I do with it? No Thank you..

No one even try the crockpot for a very long time, until we moved to our new home, with a bigger kitchen and a lot more room for kitchen gadgets that I love so much!

The crock pot got himself a new loving home, and we become best friends ever since.

I want to share with you some of the conclusions I ended up with from my experience with mycrock pot slow cooker. I absolutely love it.

At first I thought that throwing everything into the slow cooker without frying them first (as I do when I am cooking slow cooker chicken recipes like chicken stew and casserole. First I fry the chicken and the vegetables.)

But...and that's a big But...cooking in a slow cooker to my understanding should be very easy to do. Now I am not saying that Frying is difficult, but cleaning after frying IS! and I really, really, hate to clean up after frying, honestly I do.

After playing with the crockpot and trying all kinds of Crockpot Chicken Recipes. I discovered that adding an extra hour or two to my cooking time that it will improve the look and the taste of the chicken and it will give it a color that looks nearly as if you had fried it first before you began to make your crock pot chicken recipes.
