Carrot Pasta Sauce Recipe

Use this sauce to surround stuffed pasta shapes or as a simple sauce for spaghetti, for example. I love this sauce as it's quite an unusual sauce (well in my family). Presenting a rich carrot sauce as a base for a pasta dish can offer a great topic of conversation. The following recipe makes 1½ cups of sauce, and is great as is, or like most pasta dishes can be used as a starting point for other inspirational meals.
  • 3 carrots, peeled and chopped
  • 2 cloves garlic, peeled
  • ¼ cup orange juice
  • 1 tsp sweet Spanish smoked paprika
  • ¼ cup cream
  • salt and freshly ground black pepper
Method

Boil carrots and garlic until tender. Drain well and reserve cooking water. Pureé carrots and garlic with orange juice, paprika, cream and salt and pepper to taste. Add just enough of water that was set aside, to bring to a pourable sauce consistency.
